It’s not too pretty to eat; it’s not pretty at all.

THE MONSTER

2 slices “health bread” (e.g. seven grain)

2 tbs. hummus

1 tbs. pesto

2-4 sprigs cilantro

1 roasted brussel sprout

1 half can smoked oysters

1 clove garlic, minced

1 egg

2 tbs. half&half or milk

Salt

Toast the bread, if necessary. Spread pesto across bottom slice.

In a pan, begin to saute oysters and garlic. Mix together egg, half&half and salt and add to the pan. Let omelet cook over medium heat.

Cut brussel sprout in half and place on top of pesto bread. Add generous portion of hummus.

Once the omelet is cooked, fold and place over hummus. Finish with Cilantro leaves, cut in half and serve.

This sandwich inspired me to create this blog. It was something I whipped up to finish off the groceries in my fridge and make room for fresher produce.

While conceptually unappealing, amazingly, it tastes great! Definitely not an every day indulgence and certainly not for everyone; it’s just creamy, gooey, rich and satisfying. The bread provides a nutty, chewy backdrop for the velvety hummus and omelet, while the cilantro and brussel sprout keep the sandwich from being overwhelming. The oysters and garlic tie the whole dish together with their smokey, earthy aromas.

If you like different textures and flavors and have an adventurous spirit, this sandwich may be the way to go. Something tells me the ingredients would make for a tasty and enigmatic dip as well.
